Безпечність сумішей молочних сухих для дитячого харчування удосконаленої технології

Abstract

UA: Метою статті є дослідження показників безпечності сумішей молочних сухих (СМС) для дитячого харчування, збагачених есенціальними жирними кислотами. Наукову новизну підтверджено дослідженнями показників безпечності розроблених СМС для дитячого харчування. Практичну цінність підтверджено виробництвом на ТОВ «Хорольський завод продуктів дитячого харчування» СМС для дитячого харчування удосконаленої технології. Hа основі результатів дослідження показників безпечності збагачених СМС для дитячого харчування встановлено їх повну відповідність мікробіологічної безпечності вимогам ТУ У 10.8-40573272-004:2023. Результати визначення токсичних елементів, умісту меламіну, афлатоксину М1, активності радіонуклідів цезію–137 та стронцію–90 у зразках СМС для дитячого харчування удосконаленої технології підтвердили їх безпечність для споживання. Перспективою подальших досліджень є визначення показників безпечності СМС для дитячого харчування після певного терміну зберігання. /// EN: The aim of the article was to study the safety indicators of dry milk mixtures for baby food, enriched with essential fatty acids. The article analyzed information sources on the impact of pollutants on the health of infants. The scientific novelty is confirmed by studies of the safety indicators of the developed dry milk mixtures for baby food. The practical value of the results obtained is confirmed by the production of dry milk mixtures for baby food, enriched with essential omega-3 (formula A) and omega-6 (formula B) fatty acids at LLC Khorolsky Plant of Baby Food. Based on the results of the study of the safety indicators of dry milk mixtures for baby food, enriched with essential fatty acids, it was established that the microbiological safety of this food product fully complies with the requirements of TU U 10.8-40573272-004:2023, which is a necessary requirement for young children all over the world. According to the obtained results of the determination of toxic elements (cadmium less than 0.0001 mg/kg, lead – less than 0.001 mg/kg), the content of melamine (less than 0.05 mg/kg), aflatoxin M1 (less than 0.005 μg/kg), the activity of radionuclides cesium-137 (5.77; 5.28 Bq/kg) and strontium-90 (3.46; 3.17 Bq/kg) in samples of SMS for baby food of the improved technology of LLC «Khorolsky Plant of Baby Food Products», it can be concluded that their content is much lower than the maximum permissible concentrations, meets the requirements of regulatory documents and confirms safety for consumption. Thus, the results of the conducted studies of safety indicators indicate a high level of production culture and the effectiveness of the implemented HACCP system at LLC «Khorolsky Plant of Baby Food Products». Prospects for further research include determining the safety indicators of SMS for baby food after a certain storage period.
