Аналіз мінерального складу арахісу, що реалізується в торговельних мережах України

Abstract

UA: Сьогодні у більшості українців спостерігається дисбаланс раціонів за білками, мінералами, поліненасиченими жирними кислотами, вітамінами та іншими поживними речовинами. Кожного дня людина, ураховуючи її вік, рівень фізичної активності та вплив низки інших чинників, потребує деякої кількості калорій, які може отримати завдяки вживанню корисних харчових продуктів. Разом з енергією через їжу в організм надходять також важливі речовини: жири, білки, вуглеводи, вітаміни, харчові волокна, мінерали, пробіотики, біофлавоноїди. Перспективною сировиною для поповнення організму всіма необхідними поживними речовинами, які необхідні для підтримки здоров’я, є арахіс. У статті представлено результати дослідження мінерального складу арахісу виробників Felix Peanuts, Козацька Слава, Big Boв, що реалізуються в торговельних мережах України. Дослідження проводилися в умовах лабораторії ДНДКІ ветпрепаратів та кормових добавок (м. Львів). Уміст NH4, K, Na, Mg, Са, S, Р визначали за допомогою методики, викладеною у рекомендаціях за редакцією І.Я. Коцюмбаса за допомогою капілярного електрофорезу. Виявлено, що у складі арахісу жареному солоному міститься Амонію від 557,4 до 946,7 мг/100 г, Калію – від 816,8 до 877,6 мг/100 г, Натрію – від 33,0 до 59,0 мг/100 г, Магнію – від 203,6 до 225,2 мг/100 г, Кальцію – від 68,1 до 96,6 мг/100 г, Сульфуру – від 490,0 до 560,0 мг/100 г, Фосфору – від 270,0 до 290,0 мг/100 г. Перспективними дослідженнями є вивчення амінокислотного складу в арахісі жареному солоному різних виробників. /// EN: Today, most Ukrainians have an imbalance in their diets for proteins, minerals, polyunsaturated fatty acids, vitamins and other nutrients. Along with energy, important substances also enter the body through food, namely: fats, proteins, carbohydrates, vitamins, dietary fiber, minerals, probiotics, bioflavonoids. Consumers also acquire certain knowledge thanks to carefully developed information about the composition, action and properties of various products. Peanuts are a promising raw material for replenishing the body with all the necessary nutrients needed to maintain health. Peanuts are a source of vitamins and minerals that have a good effect on the functioning of the eart, liver, nervous system, and other organs. Due to its fibrous structure, the nut is useful for some types of cancer. However, large amounts of peanut consumption can cause allergic reactions, gastrointestinal disorders, and obesity. The article presents the results of a study of the mineral composition of peanuts from manufacturers Felix Peanuts, Kazatskaya Slava, Big Boв, sold in retail chains in Ukraine. The studies were conducted in the laboratory of the SRСI of Veterinary Preparations and Feed Additives (Lviv). The content of NH4, K, Na, Mg, Ca, S, P was determined using the method described in the recommendations edited by I.Ya. Kotsumbas using capillary electrophoresis. It was found that salted peanuts contain ammonium from 557,4 to 946,7 mg/100 g, potassium from 816.8 to 877.6 mg/100 g, sodium from 33,0 to 59,0 mg/100 g, magnesium 2,0, calcium from 68,1 to 96,6 mg/100 g, sulphur from 490,0 to 560,0 mg/100 g, and phosphorus from 270,0 to 290,0 mg/100 g. Promising research is the study of the amino acid composition in peanuts coated with salt from different manufacturers.
