Історичні передумови формування регіональної південно-української кухні та вплив на неї кулінарних традицій етнічних переселенців

Abstract

UK: У статті досліджено історію формування південно-українських кулінарних традиції. Визначено фактори, що впливають на формування і розвиток національних кулінарних традицій. Проаналізо-вано етнічний склад населення південного регіону України за часів формування і розвитку регіональної південно-української кухні. Визначено етнічні групи населення, що мали, на нашу думку, найбільший вплив на формування і розвиток етнічної південно-української кулінарії. В процесі аналізу факторів, що впливають на розвиток кулінарних традицій півдня України, визначено основні продукти, що є характерними для використання в приготуванні страв південно-української кухні. Визначено можливі напрямки подальшого розвитку кулінарних традицій півдня України. RU: В статье исследована история формирования южно-украинских кулинарных традиций. Определены факторы, влияющие на формирование и развитие национальных кулинарных традиций. Проанализирован этнический состав населения южного региона Украины во времена формирования и развития региональной южно-украинской кухни. Определены этнические группы населения, которые имели, по нашему мнению, наибольшее влияние на формирование и развитие этнической южно-украинской кулинарии. В процессе анализа факторов, влияющих на развитие кулинарных традиций юга Украины, определены основные продукты, характерные для использования в приготовлении блюд юго-украинской кухни. Определены возможные направления дальнейшего развития кулинарных традиций юга Украины. EN: The article examines the history of the formation of South Ukrainian culinary traditions. It is established that the process of creating Ukrainian culinary traditions is due to the historical transformations to which the Ukrainian nation has undergone. It is determined that the development of culinary art of a particular society was greatly influenced by various factors, including not only economic development and lifestyle of the people, but also historical processes, geopolitical situation, religion, climatic conditions and borrowing culinary traditions of other countries. It has been established that the appearance of a wide variety of dishes with high taste and nutritional properties was facilitated by the fact that since ancient times the Ukrainian population had an opportunity to eat both plant and meat foods. The research and the analysis of the ethnic composition of the southern region population of Ukraine during the formation and development of regional southern Ukrainian cuisine, allowed us to identify ethnic groups that, in our opinion, had the greatest influence on the formation and development of southern Ukrainian cuisine. The immigrants played an important role not only in the formation of culinary traditions of South Ukrainian cuisine, but also in the diversity of cultural traditions, trade and even agriculture. The southern Ukrainian cuisine was most influenced by the culinary traditions of the Bulgarian, Jewish aBelarusian peoples. To determine the significance of the influence of nationnd al minorities’ culinary traditions, the cuisines of these peoples are considered in detail. In the process of analyzing the factors influencing the culinary traditions development of the south of Ukraine, the main products that are typical for use in the preparation of dishes of southern Ukrainian cuisine are identified. The possible directions of further culinary traditions development of the south of Ukraine are determined.
