Нові методи підготовки майбутніх фахівців спеціальності «Готельно-ресторанна справа»

Abstract

UK: У статті обґрунтовується необхідність використання не тільки традиційних методів навчання, але і нових, які відповідали б запитам сучасного покоління студентства. Зроблено наголос, що в умовах глобалізації виникають зовсім нові типи комунікацій, способів збереження й передачі інформації, зв’язків і взаємин у людських співтовариствах, інші форми взаємодії різних культурних традицій. Висвітлюються зв’язки між гастрономічною культурою та процесами громадянської ідентифікації і формуванням ключових компетентностей: політично-соціальних, полікультурних, комунікативних, інформаційних, самоосвітніх. Авторами підкреслюється, що для фахівців сфери гостинності володіння саме такими компетентностями стане визначальним в успішній професійній реалізації. Визначено, що найважливішими компетентностями для студентів Мелітополя як міста етнокультурного розмаїття є полікультурність і комунікативність. Отже, на думку авторів, ефективним способом для розвитку цих компетентностей є залучення студентів до роботи в громадських організаціях за професійним спрямуванням. Саме з цією метою була створена громадська організація «Інтеркультурне гастрономічне коло». На прикладі проведення різноманітних гастрокультурних заходів, показано, що відродження традицій, а також безпосереднє спілкування студентів з носіями національної культури сприятиме кращій самореалізації студентів спеціальності «Готельнуресторанна справа» в професійній діяльності. EN: The article substantiates the need to use not only traditional teaching methods, but also new ones that would meet the needs of the modern students generation. It is emphasized that in the conditions of globalization, completely new types of communication, ways of storing and transmitting information, connections and relationships in human communities, other forms of interaction of different cultural traditions are emerging. The links between gastronomic culture and processes of civic identification and the formation of key competences: political, social, multicultural, communicative, informational, self-educational are highlighted. The authors emphasize that for specialists in the hospitality field, possession of such competencies will be crucial in successful professional realization. It is determined that the most important competences for students of Melitopol as a city of ethno-cultural diversity are multiculturalism and communication. Therefore, according to the authors, an effective way to develop these competencies is to involve students in working in public organizations by a professional direction. It was for this purpose that the public organization "Intercultural Gastronomic Circle" was created. On the example of various gastronomic events, it is shown that the revival of traditions, as well as the direct communication of students with carriers of national culture will contribute to better self-realization in professional activity of students of the specialty "Hotel and Restaurant business".
