Короткий огляд (реферат): UK: З ’ясовано особливості впливу подвоєної дози вітаміну Е на антиоксидантну активність скелетних м’язів гусей у передзабійному періоді. Доведено, що збільшення вмісту вітаміну Е у раціоні гусей сприяє помірній активізації системи антиоксидантного захисту. Одним з встановлених механізмів цього впливу є активізація супероксиддисмутази і глутатіонпероксидази та посилення безпосереднього впливу цих ензимів на антиоксидантну активність скелетних м ’язів. При збільшенні вітаміну Е у раціоні гусей вдвічі, узгодженість досліджених показників прооксидантно-антиоксидантної рівноваги впродовж досліду скорочується на 25,0% порівняно із контролем. Висловлено припущення, що підвищення рівня збалансованості показників цієї рівноваги є тим механізмом додаткової активізації системи антиоксидантного захисту, який включається при нижчих концентраціях антиоксидантів, у тому числі вітаміну Е. RU: Изучены особенности влияния удвоенной дозы витамина Е на антиоксидантную активность скелетных мышц гусей в предубойному периоде. Показано, что увеличение содержания витамина Е в рационе гусей способствует умеренной активизации системы антиоксидантной защиты. Одним из установленных механизмов этого воздействия является активизация супероксиддисмутазы и глутатионпероксидазы и усиление прямого влияния этих энзимов на антиоксидантную активность скелетных мышц. При увеличении содержания витамина Е в рационе гусей в 2 раза, сбалансированность исследуемых показателей прооксидантно-антиоксидантного равновесия в течение опыта сокращается на 25,0% по сравнению с контролем. Высказано предположение, что повышение уровня сбалансированности показателей этого равновесия является тем механизмом дополнительной активизации системы антиоксидантной защиты, который включается при более низких концентрациях антиоксидантов, в том числе витамина Е. EN: One of the traditional poultry industries in Ukraine is the geese breeding. Along with other poultry, geese are the least prone to the conditions of breeding and keeping. However, recently the number of geese in Ukraine has significantly decreased, although the production of geese meat in the world is steadily increasing. The introduction of scientific achievements in the production will contribute to increasing the efficiency of this industry. In order to improve the quality of poultry meat to its diet, antioxidant impurities are added. Vitamin E is traditionally considered to be one of the most effective antioxidants. However, recently, a significant amount of experimental data has been made available to confirm the harmful effects of vitamin E supra-physiological doses. The purpose of the research is to find out the effect of a double dose of vitamin E on the antioxidant activity of skeletal muscles of geese in the pre-slaughter period. The indicated interval of geese ontogenesis (from the 35th to the 63d day) is characterized by the physiological tension in the bird organism caused by the formation of juvenile feathers (six - seven weeks). The physiological tension in the system of antioxidant protection (AOP) is indicated by an increase in the content of lipoperoxidation products in the lipid extracts of skeletal muscles (TBCAPup), in the homogenates of these tissues (TBCAPhom) and at the initiation of the peroxide oxidation of lipids (POL) Fe2+ (TBCAPinc) by 58.8, 45.2 and 150.5%, respectively, in the skeletal muscles of the control group of geese, while the coefficient of antioxidant activity (Caoa) decreases by 41.8 % from the 42nd to the 56th day. In the skeletal muscles of the control group of geese there are various-directional changes in the activity of antioxidant enzymes, namely: SOD-activity in the time tends to decrease, CAT activity - to increase, and GPO is activated in the 49-day-old geese during the physiological tension and decreases to the baseline level at the end of the experiment. From the 35th to the 63d day, the content of vitamin A and f-carotene decreased significantly. The content of vitamin E was characterized by the highest consistency with changes of CAoA. For the experimental group of geese a similar character of the dynamics of these indicators is established. The middle level by the content of TBCAPnp, TBCAPhom and TBCAPinc of skeletal muscles was lower in the experimental group compared to the corresponding indicators of the control. But the experimental group surpasses by 9.3% the control one by the average of CAoA. At the same time, stabilization of all the indicators of the experimental group compared to the control one was established.The compensatory growth of SOD and CAT activity in the geese of the experimental group during the physiological tension was observed. The GPO activity of the experimental group from the 42nd day to the end of the experiment was significantly higher than the corresponding indicator of the control. It is established an increase in the coefficient of variation for all antioxidant enzymes of skeletal muscles in the experimental group of geese. An increase of the content of vitamin E in the diet of geese led to an increase of its content in skeletal muscles of the 63-day-old geese and a significant increase in the middle level of f-carotene (by 20.3%). There is also an increase in the level of variability for vitamin A and E content. The results of the cluster analysis more clearly represent the dependence of antioxidant activity of skeletal muscles on the studied parameters. Thus, an increase in the content of vitamin E in the diet of geese in the pre-slaughter period contributes to the moderate activation of the antioxidant defense system. One of the established mechanisms of this effect is activating SOD and GPO and increasing the influence of these enzymes on the antioxidant activity of skeletal muscles. The consistency of the parameters of the prooxidantantioxidant equilibrium decreases with an increase in the content of vitamin E. It is likely that raising the level of balance of this equilibrium is the mechanism of additional activation of the AOP system, which starts functioning under the low concentrations of antioxidants, including vitamin E.
